The Goan food indeed is a contrasting influence of its rich history and legacy that is mainly inspired by Indian and Portuguese influences with an exciting blend of the East and the west. Let’s look into the Goan cuisine to know about the fun-loving land.
Bebinca or bibik is a multi-layered authentic Goan sweet with a stock of seven to sixteen thin layers of preparation. Bebinka is often referred to as the ” Queen of Goan Dessert ” and is an integral part of a festive menu for special occasions like Christmas, Easter, Christenings or weddings. It is served along with a scoop of vanilla ice cream.
Ingredients
(Makes about 20 to 25 pieces)
Flour: 150 gms
Granulated white sugar:400 gms
Egg yolk: 9
Coconut milk: 600 ml
Ghee or butter:12 tsp
Caramel syrup: 1 tsp
Salt: a pinch
Nutmeg powder: a pinch
Step 1
Mix egg yolk and sugar in a large bowl.
Step 2
Next, add the coconut milk and whisk until the sugar gets completely dissolved.
Step 3
Sieve the flour and gradually add the coconut milk and egg mixture along with a pinch of salt and nutmeg powder. Strain the mixture to ensure that there is no lump.
Step 4
Divide the mix into two equal-sized portions. Add a tsp of caramel syrup in one portion for a darker shade.
Step 5
The bebinca batter is now ready to be baked. Preheat the oven to 200 degrees Celsius.
Step 6
In a deep baking dish add three tsp of butter or ghee. Next, add half of a cup of caramel-coloured mix and bake it for about 15 minutes.
Step 7
Next, pour the same amount of light-coloured mix over the baked part and bake for another fifteen minutes.
Step 8
Repeat the process of greasing and layering between dark and light shades until the entire batter is used up. One can get up to 10 to 12 layers.
Step 9
Once done, top with about ½ tsp of ghee and let it come to room temperature. Gradually unmold the Bebinca, slice and enjoy with a scoop of vanilla ice cream.
