Goan Ras Omelette
Goan Ras Omelette is a delicious street food dish from Goa, combining a fluffy omelette with a spicy coconut-based chicken or vegetarian gravy (ras). Here’s how you can make it at home.
Ingredients
(Serving for 2)
For the masala paste
Dried red chilli: 3
Coriander seeds: 1 tsp
Cumin seeds: 1 tsp
Fennel seeds: 1 tsp
Black peppercorn: ½ tsp
Clove: 2
Cinnamon stick: 1
Garlic clove: 3
Ginger: ½ inch
Grated coconut: ½ cup
For the Ras
Chicken: 250 gms
Onion: 1
Tomato: 1
Turmeric powder: ½ tsp
Coriander powder: 1 tsp
Garam masala powder: ¼ tsp
For the Omelette
Eggs: 4
Onion: 1 finely chopped
Green chilli: 1 finely chopped
Salt and pepper to taste
Butter or oil: 1 tsp
Step 1
For the masala, dry roast red chilli, coriander seeds, cumin, fennel, black pepper, clove and cinnamon in a pan until aromatic. Add ginger, garlic and grated coconut. Roast for a couple of minutes. Blend with a little water to form a smooth paste.
Step 2
For the gravy, heat oil in a pan and saute onion until golden brown. Add tomato and cook until soft.
Step 3
Add the coconut masala paste, turmeric powder, chilli powder, coriander powder, garam masala powder and salt. Saute for a couple of minutes. Add chicken pieces ( optional) and mix well. Cook for about a few minutes. Pour in water and simmer for about 15 to 20 minutes until the chicken is cooked and the gravy thickens.
Step 4
Beat eggs with onion, green chilli, coriander and salt. Heat oil in a pan and pour the egg mixture. Cook until golden brown. Flip if necessary.
Step 5
To serve, place the omelette on a plate. Pour the hot gravy over or around the omelette.
Serve with Goan poi ( bread) or steamed rice.
