A traditional Bengali thali is incomplete without crispy vegetable fritters. The classic Patol Bhaja is a typical summer classic recipe that pairs perfectly with the staple rice and dal.
Ingredients
(Serves 4)
Parwal or patol: 10 pieces
Turmeric powder: ½ tsp
Red chilli powder: 1 tsp
Ginger garlic paste ( optional): 1 tsp
Cumin: 1 tsp
Salt to taste
Oil for frying
Step 1
Lightly scrape the patol with the help of a knife.
Step 2
Wash under running water and cut lengthwise into halves.
Step 3
Pat dry the slices. In a large bowl combine the patol slices with the above-mentioned masala so that each of the pieces gets evenly coated with the spices.
Step 4
Heat oil in a pan and gently place the sliced vegetables.
Step 5
Fry from both sides until golden brown. Serve hot as a side dish with traditional rice dal or khichuri.
