Bajra Ki Roti, Lehsun Ki Chutney
Bajra (pearl millet) ki roti is a nutritious flatbread especially eaten across the state of Rajasthan as a staple breakfast menu. The gluten-free roti is often paired with spicy and tangy lehsun ki chutney.
Ingredients
(Makes about 4 rotis)
Bajra atta: 1 cup
Wheat flour: ¼ cup
Salt as required
Kasuri methi: 2 tsp (optional)
Lukewarm water to knead the dough
For the chutney
Garlic clove: 15 to 20
Kashmiri red chilli: 7 to 8
Lemon juice: ½ tsp
Salt: salt to taste
Step 1
Combine together bajra atta, wheat flour, Kasuri methi and salt. Gradually add the required amount of lukewarm water to knead a soft dough.
Step 2
Set it aside for about 10 minutes.
Step 3
Take a thick bottom tawa and let it be medium hot.
Step 4
Divide the dough into four equal-sized balls.
Step 5
Grease the plastic sheet or banana leaf and flatten each ball with the help of the finger to form a thick roti.
Step 6
Place the roti on the tawa and cook from both sides until done. Apply ghee and serve hot.
Chutney
Grind together garlic, red chilli and a tsp of water into a smooth paste. Season with salt and sprinkle the lemon juice. Give it a good mix and serve it along with bajre ki roti.
