Curd rice
Healthy and cooling to the palate, curd rice is a must-have dish in a south Indian household that requires less effort and time to cook. This ultimate comfort food is prepared with rice and curd and tempered with a couple of aromatic spices. Curd rice tastes best if served chilled along with papad and pickle.
Ingredients
Rice: 2 cup cooked
Curd: 1 cup
Grated ginger: ½ tsp
Mustard seed: 1 tsp
Cumin seed: ½ tsp
Curry leaves: 6
Broken red chilli: 2
Urad dal: ½ tsp
Salt as per taste
Ghee: 2 tsp
Step 1
Cook the rice in a pressure cooker with a mushy texture. Let it cool and come down to room temperature.
Step 2
Mix the curd with the cooked rice. Add 2 tsp of milk and combine them all together. Set it aside.
Step 3
Heat ghee in a small pan. Once hot add the mustard seed and cumin seed and let them splutter.
Step 4
Next add the urad dal and saute until golden brown. Add the broken green chillies, curry leaves and grated ginger and saute for about half a minute.
Step 5
Turn off the heat and let the tampering cool down.
Step 6
Pour the tempering mixture over the curd rice and mix well. Serve it chilled.
