
Indian street food recipes: Sabudana Vada

Sabudana Vada
Sabudana Vada is a popular crispy fried snack that is served as street food in many parts of India, especially in Maharashtra.
Ingredients
(Makes about 6 to 8 vadas)
Sabudana (Sago): 1 cup
Potato: 2 boiled and mashed
Peanuts: ½ cup coarsely ground
Green chilli: 2 finely chopped
Cumin seed: 1 tsp
Lemon juice: 1 tsp
Grated ginger: 1 tsp
Coriander leaves: 2 tsp chopped
Sugar: ¼ tsp ( optional)
Salt to taste
Oil for frying
Step 1
Rinse sabudana in water a couple of times. Soak it in enough water ( just above the sabudana level) for 4 to 5 hours or overnight. Drain well and remove excess water.
Step 2
In a mixing bowl, combine soaked sabudana, mashed potatoes, ground peanuts, green chili, cumin seed, ginger, lemon juice, coriander leaves, salt and sugar.
Step 3
Mix everything well to form a dough. To shape the wada, grease your hand with a little oil.
Step 4
Take a small portion of mixture and shape it into a flat round patty. Repeat with the remaining mixture.
Step 5
Heat oil in a deep pan over medium heat. Drop the Wada gently into hot oil and fry until golden brown and crispy. Remove and drain on the paper towel.
Serve hot with green chutney or sweet curd.
