Pyaaz ki kachori
The crispy and flaky Pyaaz ki kachori made with onion stuffing is sold in almost every street stall in Rajasthan. The spicy kachori is served along with coriander and tamarind chutney.
Ingredients
(Serving for 2 to 3 persons )
For the dough
Maida: 2 cup
Sooji: ¼ cup
Ghee: ¼ cup
Salt to taste
For the stuffing
Chopped onion: 2 cups
Green chilli: 2 to 3
Ginger garlic paste: 1 tsp
Fennel seed: 1 tsp
Cumin seed: 1 tsp
Turmeric powder: ½ tsp
Coriander powder: 1 tsp
Red chilli powder: 1 tsp
Garam masala powder: 1 tsp
Salt to taste
Step 1
In a mixing bowl combine all-purpose flour, sooji, ghee and salt. Mix well, and gradually add water and knead a smooth dough. Cover and keep aside for at least 20 minutes.
Step 2
Heat oil in a pan and add fennel and cumin seeds for the filling. Once splutter, add chopped onion and saute until golden brown.
Step 3
Add sliced green chilli, turmeric powder, red chilli powder, coriander powder, garam masala powder, ginger garlic paste and salt. Cook until the raw smell goes away. Remove from heat and let it cool.
Step 4
Divide the dough into equal-sized balls. Roll out each one of them into a small circle.
Step 5
Place a spoonful of onion filling in the centre of each circle. Gather the edges and seal them completely.
Step 6
Gently flatten the filled ball into a disc.
Step 7
Heat oil in a deep frying pan. Once hot, gently slide the kachori and fry until crispy and golden brown.
Step 8
Remove and drain excess oil in the paper. Serve hot with coriander and tamarind chutney.
