Katlambe
Katlambe is a crispy deep-fried bread often enjoyed with spicy chole. It is a popular street food, especially in Northern India including regions like Uttarakhand.
Ingredients
(Makes about 6 to 8)
Maida: 2 cups
Ajwain (Carom seed): ¼ tsp
Ghee: 2 tsp
Oil for frying
Salt to taste
For layering
Rice flour: 2 tsp
Ghee: 2 tsp
Step 1
To prepare the dough, add maida, ajwain and salt in a large mixing bowl. To this add ghee and rub until it resembles a breadcrumb-like texture.
Step 2
Gradually add water and knead into a smooth and soft dough. Let it rest for about half an hour.
Step 3
Mix ghee and rice flour to form a smooth paste. This will help create crispy layers. Divide the dough into equal portions and roll each into a thin circle.
Step 4
Apply a thin layer of ghee, and rice flour mixture over the rolled dough. Fold it into a pleated fan shape or roll it into a log and then roll it into a spiral. Roll out gently again into a disc.
Step 5
Heat oil in a deep pan over medium heat. Once hot, carefully drop the Katlambe into the oil. Fry until golden brown and crispy, flipping occasionally.
Serve hot with chhole, potato curry or spicy chutney.
