Kaladi Kulcha is a popular street food dish from Jammu and Kashmir combining a local cheese called kaladi with crispy kulcha.
Ingredients
(Serving for 4 persons)
Kaladi cheese: 200 gms
Butter or ghee: 1 tsp
Onion: 1 finely sliced
Green chilli: 2 finely chopped
Chaat masala: 1 tsp
Black pepper: ½ tsp
Salt to taste
Kulcha: 4
Step 1
Heat a pan on medium flame and add ghee or butter. Slice the kaladi into thick slices.
Step 2
Pan-fry the kaladi slices until they are crispy and golden brown on both sides. This should take about a couple of minutes from both sides. Once done, remove from the pan and set aside.
Step 3
In the same pan saute green chilli and onion until they turn soft. Add chaat masala, salt and pepper and mix well.
Step 4
Heat a fresh tawa and toast kulcha with butter until crisp and golden brown.
Step 5
To assemble the Kaladi Kulcha, place the toasted kulcha on a plate. Add a few spices of sauteed kaladi on the top of the kulcha. Spoon the chilli and onion mixture over the kulcha. Garnish with coriander leaves and squeeze a lemon juice.
Step 6
Serve hot and enjoy the rich and cheesy flavour of kaladi with the crispiness of kulcha.
