Jini Dosa
Jini Dosa is a delicious Mumbai street food variation of dosa known for its spicy, tangy, and cheesy filling. Here’s a step-by-step recipe for making Jini Dosa.
Ingredients
(Makes about 5 to 6 Jini Dosas)
Dosa batter: 2 cups
For the filling
Butter or ghee: 2 tsp
Onion: 1 medium finely chopped
Tomato: 1 medium finely chopped
Capsicum: 1 finely chopped
Grated cheese or paneer: ¼ cup
Mozzarella cheese: ¼ cup grated
Tomato ketchup: 2 tsp
Green chilli sauce: 1 tsp
Schezwan chutney: 1 tsp
Red chilli powder: 1 tsp
Garam masala powder : ¼ tsp
Salt to taste
Fresh coriander leaves: finely chopped
Step 1
To prepare the dosa, heat a non-stick dosa tawa on medium heat. Once hot pour a ladle full of Dosa batter in the centre and spread it evenly into a thin circle.
Step 2
Cook on medium flame until the bottom turns slightly golden.
Step 3
Spread a layer of ghee on the Dosa. Add a pinch of salt and sprinkle red chilli powder evenly on the surface. Spread a thin layer of tomato ketchup, chilli sauce and Schezwan chutney.
Step 4
Sprinkle chopped onion, diced capsicum, tomato and green chilli over the dosa. Spread the grated paneer and mozzarella cheese over the top.
Step 5
Sprinkle garam masala powder and fresh coriander leaves over the filling. Press the vegetables lightly with a spatula so that they stick to the dosa. Fold or roll the dosa gently like a wrap or cut it into segments.
Step 6
Serve hot with coconut chutney or tangy tomato ketchup.
