Dhuska
Dhuska is a traditional deep-fried snack from Jharkhand made with rice and lentils. It is often served with aloo curry or chutney.
Ingredients
(Makes about 8 to 10 medium-sized Dhuska)
Basmati rice: 1 cup
Chana dal: 1 cup
Turmeric powder: ½ tsp
Salt to taste
Mustard oil for frying
Step 1
Thoroughly wash the rice and dal. Soak them in rough water for six to eight hours or overnight.
Step 2
Drain the excess water and grind the soaked rice and dal into a smooth paste. The batter should have a pouring consistency.
Step 3
Add salt and turmeric powder and give it a good mix.
Step 4
Put oil in a kadai. Let the oil reach the smoking point.
Step 5
Pour the ladle slowly into the centre of the oil. Fry it turning on both sides till it turns crispy and golden brown.
Step 6
Take it out on an absorbent paper. Serve it hot with any spicy gravy dish of your choice.
