Bhutte Ka Kees
Bhutte Ka Kees is a traditional street food from Madhya Pradesh made with grated corn, milk and spices. Here’s a simple and authentic recipe for you to try.
Ingredients
(Serving for 2 to 3 persons)
Grated fresh corn: 2 cups
Ghee: 2 tsp
Mustard seeds: 1 tsp
Green chilli: 1 finely chopped
turmeric powder: ½ tsp
Red chilli powder: ½ tsp
Milk: ½ cup
Sugar: ½ tsp
Lemon juice: ½ tsp
Grated coconut: ½ tsp
Chopped coriander leaves: 1 tsp
Salt to taste
Step 1
Take a fresh corn cob and grate it to extract soft milky pulp.
Step 2
Heat ghee in a pan, add mustard seed and let it splutter. Add chopped green chilli.
Step 3
To this, add grated corn, turmeric powder and red chilli powder. Sauté for a couple of minutes.
Step 4
Pour in the milk, mix well and cook on a low flame until the mixture thickens, stirring occasionally. It will take about 8 to 10 minutes to reach the desired consistency.
Step 5
Add salt and sugar for balance. Add lemon juice and cook for another minute.
Step 6
Garnish with coriander leaves and grated coconut. Serve warm.
