Much like the Indian culture, the cuisine of India is blessed with an immense range of traditional as well as regional food. Depending upon the availability of local vegetables, fruits, Spices and herbs along with the climatic factor, Indian food varies in choices. Each state is influenced with these choices making them unique and distinctive from one another.
A traditional Maharashtrian recipe Zunka is made using besan and is one of the most comforting foods that is served along with bhakri. A quick fix dish if one runs out of vegetables in the house, this spicy dish can be easily served for lunch as well as dinner . Maharashtrian cuisine is all about invincible taste that covers an extensive variety of spicy and subtle dishes.
Ingredients
Besan : ½ cup
Onion : 2 small
Ginger garlic paste : 1 tsp
Mustard seed : ½ spoon
Cumin seed : ½ spoon
Curry leaves : 3 to 4
Turmeric powder : ¼ tsp
Red chilli powder : 1 tsp
Salt as per taste
Oil : 2 tsp
Step 1
Heat a pan and dry roast the besan.
Step 2
Heat oil in a kadahi and add mustard seeds and cumin seed and let it splutter. Add the curry leaves along with sliced onion and saute until onion turns translucent. Add the ginger garlic paste along with the dry masala and fry them all together till it is done.
Step 3
Add the roasted besan and season with salt. Sprinkle the water gradually, stirring it continuously. Cover it and cook on low heat for about ten minutes until the water gets absorbed.
Step 4
Cook it until it becomes coarse. If required add little oil so that the mixture does not dry up completely.
Step 5
Garnish with coriander leaves and serve hot with bhakri.
