The markets in Goa are loaded with yam or suran during the rainy season. Goans love their Suran Fodi as an accompaniment with their vegetarian thali. These fodis are basically semolina-crusted sliced yam that is pan-fried to crisp.
Ingredients
(Serving four people)
Suran or yam: 250 gms
Red chilli powder: 1 tsp
Turmeric powder: ½ tsp
Tamarind paste: 2 tsp
Salt: 1 tsp
Oil: 4 tsp
For the coating
Rice flour: 1 tsp
Semolina: 2 tsp
Salt: ½ tsp
Step 1
Apply coconut oil in your palms and then with the help of a kitchen knife cut the thick skin of the yam and discard.
Step 2
Thinly slice the yam.
Step 3
Soak the yam slices in water and salt for at least half an hour as this will minimize the itching.
Step 4
Next, wash them under running water for some time.
Step 5
Coat the slices with tamarind paste, turmeric powder, red chilli powder and salt and set aside.
Step 6
In a separate bowl mix together rice flour, semolina and a pinch of salt.
Step 7
Heat oil in a frying pan and coat the yam with the flour on both sides. Gently place each of the slices in the pan and fry on medium flame until crisp and golden brown.
Step 8
Serve it along with steamed rice, maskachi bhaji and sangocha ross and enjoy the traditional Goan vegetarian meal.
