Salli per edu
Salli per edu or egg on fried potato straws is a traditional parsi breakfast recipe that is served along with pav or toast. The Parsi community shares a very unique love affair with egg as it is extensively used not only in their food but also in their religious ceremonies. They can eat egg on anything and one such unique recipe is Salli per edu that is not only easy to cook but tastes amazing and blissful too.
Ingredients
Egg : 3
Tomatoes : 2
Salli or deep fried potato straw : 2 cups
Green chili : 3
Ginger garlic paste : 1 tsp
Crushed black pepper : 1 tsp
Coriander leaves : 2 tsp
Oil : 1 tsp
Salt as per taste
Step 1
To make Salli deep fry the potato straw until crisp and golden brown.
Step 2
Heat oil in a deep bottom frying pan.
Step 3
Add the ginger garlic paste and saute for a few seconds. Put the tomatoes and green chili along with salt and saute them all together for a couple of minutes.
Step 4
Add the Salli and gently mix them all together. Sprinkle a few drops of water and cover it. Let it cook on low heat for about four to five minutes.
Step 5
Break the eggs on the top of the Salli and season with salt and pepper. Cover and cook for a couple of minutes.
Step 6
When the edges are brownish and yolks are firm, slide it out on a plate and enjoy every bite of Salli per edu.
