Much like the Indian culture, the cuisine of India is blessed with an immense range of traditional as well as regional food. Depending upon the availability of local vegetables, fruits, Spices and herbs along with the climatic factor, Indian food varies in choices. Each state is influenced with these choices making them unique and distinctive from one another.

Parsi Brown Rice
Lightly golden coloured, mildly sweet, highly aromatic, Parsi brown rice is an integral part of Parsi cuisine. All it requires is caramelizing the onion with rice and handful of flavourful spices and eventually cooking it to perfection. The tinge of sweetness of the rice goes perfectly well with the spicy dhansak that makes it a typical Sunday menu in a regular Parsi household.
Ingredients
Long grain basmati rice : 2 cup
Onion : 2 small thinly sliced
Cinnamon stick : 1
Green cardamom : 3 to 4
Clove : 4
Black pepper corn : 5
Sugar : 2 tsp
Ghee : 2 tsp
Salt as per taste
Water : 4 cups
Step 1
Soak the rice in enough water for at least half an hour. Drain the excess water and keep it aside.
Step 2
In a thick bottom pan add ghee and once hot add the cardamom, cinnamon, black pepper and cloves and fry till it releases its aroma.
Step 3
Next put the sugar and stir until caramelized. Add the sliced onion and continue frying it until golden brown. Keep aside some caramelized onion for garnishing.
Step 4
Add rice and stir it gently so that the grains do not break. Add salt and water and cook till the water gets absorbed and rice is cooked.
