Jodhpuri vada or Mirchi vada is a popular street food in Rajasthan. This traditional fritter is made by stuffing the big-sized green chilli with spicy potato filling, dipped in besan batter and fried until crispy. Enjoy the vadas with spicy chilli chutney and a cup of tea.
Ingredients
(Serves 3 to 4 persons)
Large green chillies: 8
Besan: 1 cup
Turmeric powder: ¼ tsp
Red chilli powder: ½ tsp
Ajwain seed: ¼ tsp
Asafoetida: a pinch
For the stuffing
Boiled potatoes: 3 to 4
Red chili powder: ½ tsp
Coarsely ground fennel seed: ¼ tsp
Cumin powder: ¼ tsp
Raw mango powder: ¼ tsp
Grated ginger: ¼ tsp
Chopped green chilli: 1 tsp
Coriander leaves: 1 tsp
Salt to taste
Step 1
Wash the chillies and pat them dry. Slit lengthwise in the middle and remove the seed.
Step 2
Mash the boiled potatoes. Add red chilli powder, ground fennel seed, turmeric powder, cumin powder, grated ginger, raw mango powder, coriander leaves, and salt and give it all a good mix. Keep the stuffing aside.
Step 3
Stuff the chilli with the potato mixture.
Step 4
In a large bowl take the besan. To this add turmeric powder, chilli powder, asafoetida, carom seed and a tsp of oil. Add the required amount of water and whisk together into a smooth thick batter with any lump.
Step 5
Dip the stuffed chilli in the besan batter and deep fry on a medium flame until golden and crispy. Serve hot with the chutney of your choice.
