Bolinhas is the traditional signature dessert of Goa that represents Goa’s history as a part of Portuguese India. This soft and crispy cookie is made with coconut and semolina and is a must-dish for the Christmas celebration. Bolinhas is traditionally baked in firewood which gives the cookies a distinct taste and aroma.
Ingredients
Grated coconut: 1 cup
Semolina: 250 gms
Sugar: 200 gms
Ghee or unsalted butter: 4 tsp
Egg: 2
Nutmeg powder: a pinch
Salt: a pinch
Step 1
Dry roast semolina in a thick bottom pan stirring continuously for about seven to eight minutes until dry and aromatic.
Step 2
Grind the coconut along with a tsp of water. We do not want the coconut to turn into paste, just need to make it smooth without changing its texture.
Step 3
In a separate bowl whisk together butter and sugar.
Step 4
Gradually add the egg and whisk. To this gradually add the roasted semolina and stir to combine the mixture. Next, add the coconut along with nutmeg powder and give it all a good mix. Cover and keep it aside to rest for about 4 to 5 hours. This will help the batter to rise up and absorb all the moisture.
Step 5
Preheat the oven to 350 degrees Celsius. Grease the baking tray. Make small-sized balls with the dough and place them on the tray.
Step 6
Flatten the balls with the help of a knife and cut the cross in the centre of the cookies.
Step 7
Bake the cookies for about 30 to 35 minutes until golden brown.
Step 8
Let it cool down completely and store it in an airtight container.
