Begun Bhaja or Brinjal fritter is one of the most loved Telebhaja or fried snacks in Bengal and other eastern parts of India. The crisp and delicious Bhaja is quite an essential part of a Bengali thali that is served as a side dish with Dal Bhaat or Khichuri.
Ingredients
(Serving for 4 to 6 people)
Brinjal: 2 large
Gram flour: 8 tsp
Chilli powder: 2 tsp
Poppy seed: 1 tsp
Chaat masala: 1 tsp
Oil for frying
Salt to taste
Step 1
Slice the eggplant into rounds with about medium thickness. Season with salt and keep it aside.
Step 2
In a large mixing bowl add besan, chilli powder, poppy seed, a tsp of oil and salt. Add the required amount of chilled water to make a semi-thick consistency batter.
Step 3
Heat oil in a thick bottom pan. In the meantime, pat dry the eggplant on tissue paper.
Step 4
Dip each slice of the eggplant in the batter and gradually add to the oil. Deep fry until crispy and golden brown.
Step 5
Drain the excess oil. Sprinkle chaat masala and black salt and serve hot.
