Jalebi
The crispy, crunchy Jalebi dipped in sugar syrup is liked to be consumed both for breakfast and even as an evening snack. Whether enjoyed as a dessert or festive snack, jalebi is available at almost every street corner in India.
Ingredients
(Serving for 3 to 4 persons)
Maida: 1 cup
Besan: 2 tsp
Yoghurt: 1 tsp
Baking soda: a pinch
Baking powder: ½ tsp
Warm water: 1 cup
Sugar: 1 ½ cup
Saffron strand: 10 to 12
Cardamom powder: 1 tsp
Ghee or oil for frying
Step 1
In a mixing bowl combine all-purpose flour, besan, yoghurt, baking powder and baking soda. Gradually add warm water while whisking to form a smooth batter. The consistency should be a little runny and let it rest for about 15 minutes.
Step 2
To make a sugar syrup, combine sugar and water in a saucepan. Bring the mixture to a boil, stirring continuously until the sugar gets completely dissolved. Add the saffron strand and cinnamon powder and simmer the syrup for about five minutes until it reaches a slightly sticky consistency. Keep the syrup warm.
Step 3
Heat ghee or oil in a wide heavy-bottomed pan over medium heat.
Step 4
Transfer the batter to a piping bag. Squeeze the batter into hot oil in a circular motion, forming a spiral or concentric circle.
Step 5
Fry the jalebi until they are golden and crisp on both sides.
Step 6
Dip the fried jalebi into the warm sugar syrup ensuring they are fully coated. Let the jalebi soak in syrup for 2 to 3 minutes to absorb the sweetness. Enjoy the crispy jalebi with family and friends.
