Depending upon the availability of local vegetables, fruits, Spices and herbs along with the climatic factor, Indian food varies in choices. Sabudana Vada
The traditional deep fried fritters or the Sabudana Vada is an authentic Maharashtrian recipe and an integral part of the regional snack menu . Although it is popular as a fasting food throughout the country, it is equally Relished as a street food and tea time snack in Maharashtra. Made with soaked sabudana or sago, boiled potatoes, roasted peanuts along with few other regular spices, Sabudana Vada is best served with green chutney and yogurt.
Ingredients
Sabudana : 250 gms
Boiled potato : 2
Roasted peanut : 100 gms
Ginger : 1 tsp (grated)
Green chilli : 2
Lemon juice : 1 tsp
Salt as required
Coriander leaves
Oil for frying
Step 1
Soak the sabudana overnight.
Step 2
Dry roast the peanut and once cool , gently peel off the skin.
Make a coarse powder in a blender.
Step 3
In a bowl combine together mashed potatoes, sabudana, sliced green chilli, peanut powder, grated ginger, lemon juice, coriander leaves and salt.
Step 4
Bind them together and divide into equal sized balls. Grease your palm and flatten these balls giving them the shape of a Patrice.
Step 5
Shallow fry the Vada and serve them hot.
