Much like the Indian culture, the cuisine of India is blessed with an immense range of traditional as well as regional food. Depending upon the availability of local vegetables, fruits, Spices and herbs along with the climatic factor, Indian food varies in choices. Each state is influenced with these choices making them unique and distinctive from one another.

Pav Bhaji
It goes without saying that pav bhaji dominates the list of Mumbai’s street food menu that is relished by people of all ages. An ultimate comfort food pav bhaji is a delicious combination of cooked and mashed vegetables that is served along with pav loaded with butter. Its journey from the humble food of masses to the menu of high end restaurants has been incredibly enduring.
Ingredients
Potato : 4
Tomato : 4
Onion : 2
Blanched green peas : ½ cup
Capsicum : ½ cup
Carrot : 1
Cauliflower : ½ cup
Ginger garlic paste : 1 tsp
Turmeric powder : 1 tsp
Red chilli powder : 1 tsp
Pav bhaji masala : 2 tsp
Salt as required
Oil : 2 tsp
Butter : 100 gms
Step 1
Boil the potato until soft. Once done peel and mash.
Step 2
Add 2 tsp oil in a pan. Add the chopped onion and saute till the colour changes.
Step 3
Add the tomatoes along with the above mentioned masala and saute them all together.
Step 4
Put the grated vegetables along with peas in the tomato masala and cook them all together for about five to seven minutes until the vegetables turn soft. Finally add the mashed potatoes and combine all while cooking together.
Step 5
Add about a cup of water and with the help of a masher, mash the vegetables along with the potato. Once done add the pav bhaji masala, top the bhaji with coriander leaves and dollop of butter.
Step 6
Serve the bhaji along with diced onion, lemon slice and butter toasted pav.
