Amritsari Khatte Ladoo Ki Chaat
Amritsari Khatte Ladoo Ki Chaat is a delicious North Indian street food, that combines tangy, sweet and spicy flavours.
Ingredients
For the Khatte Ladoo
Tamarind pulp : 1 cup
Jaggery grated: ½ cup
Fennel seed: 1 tsp
Cumin powder: 1 tsp
Red chilli powder: ½ tsp
Black salt: ½ tsp
Cornflour: 2 tsp
For the Chaat
Boiled chhole: 1 cup
Boiled and diced potato: 1 cup
Chopped onion: ½ cup
Chopped tomatoes: ½ cup
Green chilli: 2 finely chopped
Mint chutney: 3 tsp
Tamarind chutney : 3 to 4 tsp
Curd: ½ cup
Sev: ½ cup
Coriander leaves: 2 tsp
Chaat masala: 1 tsp
Roasted cumin powder: 1 tsp
Step 1
To prepare Khatte Ladoo combine tamarind pulp and grated jaggery in a pan. Cook on medium heat until jaggery dissolves completely.
Step 2
Add fennel seeds, cumin powder, red chilli powder, black salt and salt. Mix and simmer for 5 to 7 minutes until the mixture thickens slightly.
Step 3
Allow the mixture to cool, then add cornflour to bind it into a semi-solid consistency. Shape the mixture into small ladoos and refrigerate them for about half an hour to set.
Step 4
To assemble the chaat, place the Khatte Ladoo in a serving dish. Top with boiled chickpeas and diced potato. Add chopped onion, chopped tomatoes and sliced green chilli.
Step 5
Drizzle mint chutney, tamarind chutney, and the whisked curd generously. Sprinkle chaat masala, black salt, and roasted cumin powder over the top.
Step 6
Add a layer of sev and garnish with coriander leaves to enjoy the burst of flavours.
