Daulat Ki Chaat
Daulat Ki Chaat is a delicate frothy dessert popular in the streets of old Delhi, especially during the winter months. It is known for its light airy texture and rich creamy flavour.
Ingredients
(Serving for 2)
Full-cream milk: 1 litre
Cream: 100 ml
Powdered sugar: 2 tsp
Saffron strands: a few ( soaked in 2 tsp warm milk )
Green cardamom powder: ½ tsp
Chopped pistachio: 2 tsp
Chopped almonds: 2 tsp
Varq for decoration
Step 1
Boil full-cream milk and reduce it to almost half of its original quantity. Add the cream and mix well. Let it cool and then refrigerate it for 2 to 3 hours.
Step 2
Take the chilled milk and whisk it using an electric beater unless it becomes light and frothy. It may take about 15 to 20 minutes for the desired airy texture.
Step 3
Add the cardamom powder and sugar powder. Mix gently without deflating the foam. Gently fold in the saffron milk for colour and subtle flavour.
Step 4
Spoon the airy mixture onto a serving bowl forming peaks. Sprinkle the chopped pistachio and almonds over the top. Place the silver varq over it. Keep it in the fridge for a couple of hours before serving to allow it to set properly.
Step 5
Serve chilled and enjoy the light and melt-in-mouth texture of Daulat Ki Chaat.
