Vada Pav
Vada Pav is a mouth-watering snack that enjoys immense popularity in the state of Maharashtra. Mashed potatoes cooked with regular spices and herbs, dipped in gram flour batter and fried to perfection and finally sandwiched between the pav. Believe me, the explosion of flavour is worth a try.
Ingredients
(Serving for 2 to 3 persons)
Potatoes: 4 boiled and mashed
Green chilli: 4 to 6
Garlic: 6 to 7
Turmeric powder: ½ tsp
Mustard seed: ½ tsp
Curry leaves: 5
Salt to taste
For the batter
Besan: 6 tsp
Ajwain: ½ tsp
Red chilli powder: 1 tsp
Salt to taste
Oil for frying
Step 1
Heat a tsp of oil in a pan and fry green chilli and garlic. Once cool, grind it coarsely.
Step 2
In the same pan add 2 tsp oil and put the curry leaves and mustard seed. Let it splutter and release the aroma. Next, add the boiled and mashed potatoes along with turmeric, red chilli powder and salt. Stir fry them all together until done.
Step 3
In the meantime make a lump-free smooth batter with besan, salt, chilli powder, turmeric powder and water. Let it rest for some time.
Step 4
Make a medium-sized ball with the potato mix. Dip the vada in the besan batter and deep fry until crispy and golden brown. Enjoy with pav and chutney.
