Idli
Idli is one such stable South Indian food that is healthy and easy to make that tastes best with chutney and sambar. A must try dish indeed.
Ingredients
Parboiled rice : 1 cup
Basmati rice : 1 cup
Urad dal : ½ cup
Fenugreek seeds : ½ tsp
Salt to taste
Oil for greasing
Step 1
Rinse the rice and dal separately.
Step 2
Soak urad dal along with Fenugreek seeds and rice separately in enough water for almost four to five hours.
Step 3
Drain excess water and separately grind the soaked rice and dal until smooth texture. The batter should have moderate consistency
Step 4
Transfer both the batter into a large container and cover and keep it aside for eight to ten hours.
Step 5
Once the batter is fermented and rises add salt and mix both the batters tomorrow.
Step 6
Grease the idli stand and fill the idli mould with a ladle full of batter. Add water to the steamer and let it steam for eight to ten minutes. Switch off the gas.
Step 7
Take the idli stand out and let it cool down.
Step 8
Once cool, scoop the idlis out and serve with sambar and coconut chutney.
