Crispy Bombil Fry
Bombil fry or Bombay duck fry is yet another seafood delight from Mumbai’s coastal fare. This extraordinarily named creature is not a duck but a very fleshy fish that is a classic treat for fish lovers. It’s soft bones along with unparalleled flavour makes it a real indulgence. Be it fried or curry, it tastes incredible.
Ingredients
Bombil or Bombay duck : 8 pieces
Ginger paste : 1 tsp
Garlic paste : 1 tsp
Onion paste : 1 tsp
Turmeric powder : 1 tsp
Green chilli paste : 1 tsp
Kashmiri red chilli powder : 1 tsp
Malvani masala powder : 1 tsp
Lemon juice : 1 tsp
Salt : as per taste
Semolina : to coat the fish
Oil for frying
Step 1
Wash and clean the bombil under running water.
Step 2
Pat the fish pieces thoroughly and dry as possible with a paper towel. In Fact it should not have a drop of water. Next, slit it open from the centre and make fillet .
Step 3
In a plate all the mix above mentioned masala except rava and marinate the fish with it. Refrigerate it to marinate for at least half an hour.
Step 4
In a plate spread rava and roll the fish fillet over it to evenly coat them.
Step 5
Heat oil in a frying pan and fry the fish on a high flame flipping both the sides until they turn golden brown.
Step 6
Serve it hot with lemon wedges and green chutney.
