Masala Tchot
Masala Tchot is a popular Kashmiri street-style food wrap. It is a local delicacy often made with mashed peas, a blend of warm spices, and yoghurt-based spicy chutney.
Ingredients
(Serving for 2 to 4 persons)
For the Tchot
Maida or wheat flour: 2 cups
Yoghurt: ½ cup
Baking powder: ¼ tsp
Salt: ½ tsp
Ghee: 1 tsp
For the Masala topping
Boiled and mashed white peas: 1 cup
For chutney
Whisked curd: 1 cup
Dry mint powder: ¼ tsp
Radish: ¾ cup ( grated and squeezed)
Onion: ½ cup ( grated and squeezed)
Cabbage: ¼ cup finely chopped
Green chilli: 4 thinly sliced
Ginger: 1 tsp finely chopped
Ground cumin: ½ tsp
Kashmiri red chilli powder: 1 tsp
Salt to taste
Step 1
To prepare the roti, mix the flour, curd, baking powder, and salt in a large mixing bowl. Add oil and water to knead a smooth, soft dough. Cover and let it rest for at least half an hour.
Step 2
Divide the dough into small-sized balls and make a thick round roti. Cook each side until golden brown adding a little ghee if needed, until slightly puffed.
Step 3
Boil the soaked white peas with water, salt, turmeric powder, clove and black pepper. Cook until soft. Allow to evaporate the excess water. Once cool, mash the peas with the help of a masher.
Step 4
Squeeze the excess water from the onion and radish. Add the mashed peas, chopped cabbage, grated ginger, Kashmiri red chilli powder, and ground cumin powder. Add the yoghurt and mint powder and whisk them all together.
Step 5
Place a spoonful of mash in the centre of the roti and spread it evenly. Wrap and roll and enjoy the Kashmiri Masala Tchot.
