Bun Tikki
Bun Tikki is a delicious street food from Dehradun, combining crispy aloo tikki with soft buns and flavourful chutney. Here’s how to make it at home.
Ingredients
(Serving for 4)
For Aloo Tikki
Potato: 4 boiled and mashed
Bread crumbs: ¼
Cornflour: 2 tsp
Red chilli powder: 1 tsp
Garam masala powder : ½ tsp
Chaat masala: 1 tsp
Turmeric powder: ½ tsp
Salt to taste
Oil for frying
For assembling
Buns: 4
Butter: ¼ cup
Onion: 1 sliced
Tomato: 1 sliced
Cucumber: 1 sliced
For chutney
Green chutney: ½ cup
Tamarind chutney: ½ cup
Mayonnaise: 2 tsp ( optional)
Chaat masala for sprinkling
Sev ( optional) for garnishing
Step 1
Mix mashed potatoes, bread crumbs, cornflour, red chilli powder, turmeric powder, cumin powder, chaat masala and salt In a bowl. Add coriander leaves and mix well until the mixture binds.
Step 2
Divide the mixture into equal portions and shape them into flat, round patties. Heat oil and shallow fry the tikkis until golden brown and crisp. Set aside.
Step 3
Heat a tawa and add a little butter. Slice the buns in half and toast them until slightly crispy.
Step 4
To assemble the bun tikki, spread green chutney on one side of the bun and tamarind chutney on the other.
Step 5
Place a fried aloo tikki on the bottom half of the bun. Add sliced onion, tomato and cucumber. Sprinkle chaat masala for extra flavour. Optional drizzle a bit of mayonnaise for creaminess. Cover with the top half of the bun.
Step 6
Serve the Bun Tikki with extra chutney and sprinkle of sev.
