Vada Pav
Mumbai’s illustrious passion and love affair with vada pav is widely known fact. Boiled and mashed potato mixed with regular spices and herbs, dipped in gram flour batter and deep fried to perfection and finally sandwiched between the pav along with fried green chilli and chutney – vada pav is an iconic common man food that enjoys immense popularity in Maharashtra. A must try humble dish with unforgettable flavour in each bite.
Ingredients
Potato : 4 boiled and mashed
Green chilli : 4 to 6
Garlic : 6 to 7 pods
Turmeric powder : ½ tsp
Mustard seeds : ½ tsp
Curry leaves : 6 to 8
Salt : as per taste
For the batter
Besan : 6 tsp
Ajwain : ½ tsp
Turmeric powder : 1 tsp
Red chilli powder : 1 tsp
Salt : 1 tsp
Water as required
Oil for frying
Step 1
Boil and mash the potatoes.
Step 2
In a pat heat a tsp of oil and fry garlic and green chillies. Once cool, coarsely grind it.
Step 3
In the same pan add 2 tsp oil and once hot add the curry leaves and mustard seeds. Let it splutter and release its aroma. Add the mashed potatoes along with green chilli and garlic paste, turmeric powder and salt and stir fry them until they all come together. Let it cool.
Step 4
In the meantime make a smooth and lump free batter with besan, ajwain. Chilli powder, turmeric powder, salt and water. Let it rest for sometime.
Step 5
Make round shaped Vada with the potato mix. Dip the vadas in the besan batter and deep fry them. Enjoy the scrumptious vada with pav and chutney and fried chilli.
