Easy and quick to make, jackfruit appam or gaarige is a super delicious, soft and aromatic sweet that is a delicacy from the Mangalore region of Karnataka. It is indeed a regular twist to the traditional appam that is made with rice, jackfruit, coconut and jaggery.
Ingredients
(Serving for 3 to 4 persons)
Soaked rice: 1 cup
Methi dan: 1 tsp soaked
Coconut: ¼ cup
Jackfruit: 2
Jaggery: ¾ cup
Salt: a pinch
Ghee to grease the pan
Step 1
Grind soaked rice, methi seeds and coconut into a smooth paste.
Step 2
To this add a pinch of salt, jaggery and finely cut jackfruit and give it all a good mix.
Step 3
Let it rest for a couple of hours for perfect appam.
Step 4
Grease the appam pan with ghee.
Step 5
Gently place a spoonful of batter in each of the holes and fry for a couple of minutes.
Step 6
Flip over and cook for a few minutes on the other side.
