Victoria Chaat
Calcutta Victoria Chaat is one of the most loved street foods found around the Victoria Memorial in Kolkata. It’s a vibrant, tangy, sweet and spicy chat made with a base of boiled potato and crispy elements topped with chutney, curd and spices.
Ingredients
(Serving for 2)
Potato: 2 medium boiled, peeled and cubed
Black chana: ½ cup boiled
Onion: 1 finely chopped
Tomato: 1 diced
Raw mango: 1 small diced
Green chilli: 1 chopped
Coriander leaves: 2 tsp
Roasted cumin powder: ¼ tsp
Chat masala: ¼ tsp
Black salt: ¼ tsp
Red chilli powder: a pinch
Lemon juice: 1 tsp
Tamarind chutney: 2 tsp
Green chutney: 1 tsp
Yoghurt: ¼ cup beaten, lightly sweetened with a pinch of sugar and a pinch of salt
Crushed papdi or golgappa: ½ cup
Sev: ¼ cup
Salt to taste
Step 1
To prepare the base, boil the chana until soft but not mushy. Boil, peel and dice the potato.
Step 2
In a large mixing bowl, add diced potato, tomato, onion and raw mango. Toss gently to combine.
Step 3
Add tamarind chutney, green chutney, black salt, roasted cumin powder, chat masala, red chilli powder and salt. Squeeze lemon juice over the mixture and toss again to coat everything well.
Step 4
Divide the chat mixture into a serving bowl or plate. Top each portion with sev, crushed papdi, chopped coriander leaves and green chilli. Serve immediately.
