Mirchi Vada
Mirchi Vada is a spicy crispy street food from Rajasthan made with large green chilli, stuffed with flavourful potato filling, coated with gram flour batter and deep fried to perfection.
Ingredients
(Serving for 2 to 3 persons)
For the stuffing
Bhavnagri mirchi : 3 to 4
Potato: 2 medium ( boiled and mashed)
Mustard seeds: ½ tsp
Cumin seed: ½ tsp
Turmeric powder: ½ tsp
Red chilli powder: ½ tsp
Garam masala powder: ¼ tsp
Ginger garlic paste: 1 tsp
Amchur: ½ tsp
Lemon juice: 1 tsp
Salt to taste
Oil: 1 tsp
For the batter
Besan: 1 cup
Turmeric powder: ½ tsp
Red chilli powder: ½ tsp
Carom seed (Ajwain): ½ tsp
Baking soda: a pinch
Salt to taste
Oil for frying
Step 1
Slit the green chili lengthwise and remove the seed carefully.
Step 2
To prepare the stuffing, heat oil in a pan. Add cumin seed and mustard seeds and let them splutter. Add ginger garlic paste and saute for a minute.
Step 3
Add mashed potatoes, turmeric powder, red chilli powder, garam masala powder, amchur and salt. Mix well and cook for a couple of minutes. Add lemon juice and coriander leaves and let it cool.
Step 4
Fill each chilli with the prepared potato mix. Keep them aside.
Step 5
To prepare the batter mix gram flour, turmeric powder, red chilli powder, carom seeds, baking soda and salt. Gradually add water and whisk to form a smooth, thick batter.
Step 6
Heat oil in a deep frying pan. Dip each stuffed chili into the batter, coating it evenly. Carefully drop into hot oil and fry until golden and crispy.
Serve hot with green chutney, tamarind chutney or spicy garlic chutney.
