Garadu
Prepared with yam, Garadu is served in almost all street-style food stalls across the city of Indore. It’s deep-fried, spicy and tangy, making it a perfect winter treat.
Ingredients
(Serving for 5 to 6 persons)
Yam: 500 gms
Oil for deep frying
Chaat masala: 2 tsp
Red chilli powder: 1 tsp
Black salt: 1 tsp
Salt to taste
Lemon juice: 1 tsp
Fresh coriander leaves for garnishing
Step 1
Wash the yam thoroughly to remove dirt. Peel and cut into small bite-sized cubes or wedges.
Step 2
Boil the yam pieces with enough water and a pinch of salt until tender but firm and not mushy.
Step 3
Heat oil in a deep pan. Once the oil is hot, deep fry the boiled yam until golden brown and crispy. Remove on a paper towel to drain excess oil.
Step 4
Transfer the deep-fried yam to a large mixing bowl. Sprinkle chaat masala, red chilli powder, black salt and regular salt. Drizzle lemon juice and toss well to coat the yam with spices evenly.
Step 5
Garnish with coriander leaves and serve Garadu hot with chutney of your choice.

The perfect type of yam for making garadu is purple yam or Indan yam commonly referred to as Ratalu in Hindi. This yam is ideal because of its texture and flavour.
