Fafda
Here’s a traditional Fafda recipe, a popular Gujarati street food made with chickpea flour and served with fried green chilli and papaya chutney.
Ingredients
(Serving for 3 to 4 persons)
Besan: 1 ½ cup
Ajwain: ½ tsp
Turmeric powder: ¼ tsp
Baking powder: a pinch
Salt to taste
Oil: 2 tsp for frying
Step 1
In a large mixing bowl, combine besan, ajwain, turmeric powder, baking soda and salt.
Step 2
Add 2 tsp of oil and mix well. Gradually add water and knead into a firm and smooth dough. Let it rest for 10 minutes.
Step 3
Grease a clean surface and your palm with a little oil. Take a small portion of dough and place it on the greased surface.
Step 4
Use the base of your palm to flatten and stretch the dough into a thin strip around 5 to 6 inches long.
Step 5
Heat oil in a deep frying pan over medium heat. Gently lift the strip and slide it into the hot oil. Fry until golden and crispy. Remove and drain on a paper towel.
Serve hot with fried green chilli, raw papaya chutney or jalebi for the traditional combination.
