Chausela
Chhattisgarh known as the “rice bowl of India” offers a wide range of rice based dishes. A popular deep fried snack made from rice flour, Chausela is quintessential street food with crispy texture and mildly nutty flavour making it a favourite among locals.
Ingredients
(Makes about 8 to 10)
Rice flour: 2 cups
Carom seed: 1 tsp
Cumin seed: 1 tsp
Oil or ghee for deep frying
Salt to taste
Step 1
Boil water with salt, carom seeds and cumin seed. Next sieve the flour and add to the boiling water. Mix it well with spatula.
Step 2
Next, transfer the mixture to a big plate. Once cool knead it well.
Step 3
Divide the dough into small equal portions. Roll each portion into a small circular puri using a rolling pin. You can dust some rice flour if it sticks.
Step 4
Heat oil in a deep pan over medium-high flame. Once hot, gently slide the rolled Chausela into the oil.
Step 5
Fry until it puffs up and turns golden brown on both sides. Remove and place on a paper towel to drain excess oil.
Serve hot with aloo sabzi, chutney or curd for a delicious Chhattisgarhi meal.
