
Indian street food recipes: Calcutta Egg Roll

Calcutta Egg Roll
The classic Calcutta Egg Roll is one of the beloved street foods from the streets of Calcutta, which is now readily available in all parts of India.
Ingredients
(Serving for 2 persons)
For the Paratha
Maida: 1 cup
Oil or ghee: 1 tsp
Salt a pinch
For the filling
Eggs: 2
Salt and pepper to taste
Onion: 1 small, thinly sliced
Cucumber: 1 julienned
Green chilli: 2 finely chopped
Vinegar: 1 tsp
Sugar: 1 tsp
Chaat masala: ¼ tsp
Tomato sauce: 1 tsp
Step 1
To make dough, mix flour, salt and oil in a large mixing bowl. Gradually add water and knead into a soft dough. Cover and rest for about half an hour.
Step 2
Prepare the salad by mixing onion slices with vinegar, sugar and a pinch of salt. Add cucumber, green chilli and coriander leaves. Set aside.
Step 3
To make the Paratha, divide the dough into two balls. Roll each ball into thin rotis.
Step 4
Heat the tawa, drizzle oil and cook the Paratha on both sides until golden brown. Remove and keep warm.
Step 5
Beat one egg with salt and pepper. Add a little oil in the tawa, pour the beaten egg and immediately place the cooked Paratha on the top of the egg.
Step 6
Press lightly so the egg sticks to the Paratha. Cook for about 30 seconds, then flip and cook for another 10 seconds.
Step 7
To assemble the roll, place the egg side up. Add some marinated onion , cucumber salad along the centre. Drizzle some ketchup and some chaat masala. Roll it up lightly and wrap in paper or foil to hold. Serve hot and eat fresh.
