Bombay Veg Frankie Roll

Ingredients
(Makes about 3 to 4 Frankies)
For the paratha
Wheat flour: 1 cup
Maida : ½ cup (optional)
Salt: ½ tsp
Oil: 1 tsp
Carom seed: ¼ tsp
For the filling
Potato: 2 boiled and mashed
Ginger garlic paste: 1 tsp
Green chilli: 1 chopped
Turmeric powder: ½ tsp
Red chilli powder: 1 tsp
Garam masala powder: 1 tsp
Chaat masala: ½ tsp
Salt to taste
Oil: 1 tsp
For assembling
Green chutney or mayonnaise: 2 tsp
Tomato sauce: 1 tsp
Chaat masala: ½ tsp
Sliced onion
Grated cheese
Step 1
To prepare the dough, mix wheat flour, maida, salt and carom seed in a mixing bowl. Gradually add the required amount of water to knead a soft dough. Apply butter or oil and let it rest for about 15 to 20 minutes.
Step 2
Roll out thin rotis and cook them on tawa until golden brown on both sides. Keep aside.
Step 3
For the potato filling, heat the oil in a pan. Add cumin seed and let it splutter. Add ginger-garlic paste and green chilli. Saute for a few seconds.
Step 4
Add turmeric, garam masala, coriander powder and salt and mix well. Add mashed potatoes and mix until combined. Cook for a couple of minutes. Garnish with coriander leaves. Let it cool.
Step 5
Take the cooked roti and spread some green chutney or mayonnaise. Place a portion of potato filling in the centre. Add sliced onion and grated cheese. Roll tightly like a wrap.
Step 6
Toast lightly on tawa with a little oil or butter.
Serve hot with tomato sauce on the side
