Banarasi tamatar ki chaat
Banarasi tamaatar ki chaat is a delightful street food dish from the holy city of Varanasi. It is a sweet, tangy and spicy treat made using tomatoes, aromatic spices and a unique mix of ingredients.
Ingredients
(Serving for 3 to 4 persons)
Ripe potatoes: 6 to 7
Boiled potatoes: 2 diced
Green chilli: 2 finely chopped
Ginger: 1 inch grated
Ghee: 2 tsp
Asafoetida (Hing): ¼ tsp
Cumin seed: 1 tsp
Red chilli powder: 1 tsp
Turmeric powder: 1 tsp
Coriander powder: 1 tsp
Garam masala powder : 1 tsp
Chaat masala: 1 tsp
Jaggery or sugar: 2 tsp
Tamarind pulp: 2 tsp
Salt to taste
Step 1
Heat ghee in a deep pan. Add cumin seed and let it splutter. Add asafoetida for extra aroma. Toss in grated ginger and chopped green chilli and saute for a minute.
Step 2
Add chopped tomatoes and cook on medium heat until they turn soft and mushy. Add turmeric powder and salt and mix well, cover and let it simmer for about 5 minutes, stirring occasionally.
Step 3
Add tamarind pulp and jaggery or sugar. Let the mixture cook until it thickens slightly. Add the garam masala and chaat masala.
Step 4
To assemble the chaat, layer the boiled potato in a serving bowl. Pour the hot tomato mixture over them. Top with a dollop of whisked curd, sprinkle sev, add crushed papri, and garnish with coriander leaves.
