Aloo Sharla
Aloo Sharla is a beloved street food from Jalandhar, known for its crispy texture and flavourful topping. This crispy and tangy potato snack is served in a leaf bowl by roadside vendors.
Ingredients
(Serving for 4 to 5 persons)
Baby potato: 2 kg
Spinach: 1 cup thinly sliced
Fenugreek leaves: 1 cup sliced
Grated ginger: 1 tsp
Green chilli: 3 chopped
Coriander powder: 2 tsp
Red chilli powder: 2 tsp
Turmeric powder: 1 tsp
Roasted cumin powder: 1 tsp
Garam masala powder: ¼ tsp
Besan: 3 cups
Mint chutney: ½ cup
Sweet tamarind chutney: ½ cup
Sugar: 2 tsp
Salt to taste
Step 1
Wash and boil the potato for one whistle. Once cold, peel and cut into two. Add the sliced spinach and methi leaves, along with the besan, all the powdered masala, grated ginger, and salt. Add half a cup of water and make a thick batter.
Step 2
Heat oil in a pan. Gradually pour the potato mix and fry it on medium heat for 3 to 4 minutes. Flip and fry on the other side until golden brown. Take it out on an absorbent paper.
Step 3
To serve the Sharla, place the fried potatoes on a serving plate. Pour the green and tamarind sweet chutney. Top with radish lachha and sweetened curd.
Serve hot as a snack or appetiser.
