The cuisine from the five southern states of India — Tamil Naidu, Kerala, Karnataka, Andhra Pradesh and Telangana is grouped together as the South Indian cuisine. This cuisine offers a wide range of vegetarian as well as non vegetarian delicacies that is sure to delight one’s taste bud. Let us explore the mouth watering dishes from the Southern Indian states to experience the essence of each of these states.

Medu Vada
Medu Vada is a doughnut shaped south indian snack recipe made with urad dal and aromatic spices. The term Medu Vada means soft white Vadas or fritters in the local dialect. The Vadas taste awesome when served with Sambar and chutney.
Ingredients
Urad dal : 1 cup
Ginger grated : ½ tsp
Onion : 1 chopped
Green chilli : 2 thinly sliced
Curry leaves : 6 to 7
Coriander leaves : 2 tsp
Asafoetida : ½ tsp
Salt as per taste
Oil for frying
Step 1
Soak the urad dal with enough water for 3 to 4 hours.
Step 2
Drain the water completely and grind the dal into a smooth fluffy batter. If required add little water while grinding.
Step 3
Add the chopped onion, green chilli, ginger, chopped curry leaves and coriander leaves ,asafoetida , salt to the dal batter and give it a good mix.
Step 4
Make small balls from the batter with a hole in the centre. Deep fry in hot oil till it’s golden brown.
Step 5
Serve with coconut chutney.
