Akuri
Akuri is the parsi style scrambled eggs that is a signature breakfast menu and is served along with pav or toasted bread. Unlike the regular scramble, akuri is cooked along with onion and tomatoes along with regular spices with a runny and creamy consistency.
Ingredients
Eggs : 4
Onion : 1
Tomatoes : 1
Ginger garlic paste : 1 tsp
Green chilli :1
Turmeric powder : ½ tsp
Coriander and cumin powder : 1 tsp
Red chilli powder : 1 tsp
Ghee or butter : 2 tsp
Salt as per taste
Step 1
Fry onion in butter or ghee until golden brown. Add the diced tomatoes.
Step 2
Once the tomato is soft add the ginger garlic paste and stir it.
Step 3
Next add the dry spices along with salt and saute them all together until the oil comes up.
Step 4
Beat egg along with cream and pour it over the masala mix stirring frequently.
Step 5
Once the egg starts to form curd, add butter and stir it. Let it cook for another couple of minutes or until soft and creamy.
Step 6
Garnish with coriander leaves and serve with pav.
